Well, as I advanced this is what I did:
 
Innitiate to Padawan:  purely did Piket missions on Dantooine.  I'd have friends out there spawning like 40 of them at a time so I could level effectively
 
Padawan to Apprentice:  Huurton Stalkers are great xp, pulled those missions on Dant.
 
Apprentice to Knight:  I did Quenker Ravager missions on Dantooine.  These are by far the absolute best leveling mobs in the game for Jedi until you're too high of a level for them.  They're Light armor and only 25% kinetic resistances.  They poison but it's easy to cure once you hit apprentice.
 
Knight to 4/4/4/4 Guardian:  I did Enraged and Enraged Bull rancors the entire way because they were the only mobs that give us xp at that level   This honestly takes about a week or a week and a half to do the Guardian prof.

After hitting 4000 in padawan, i killed rancors. I do tend to stay away from the Enraged Bull Rancors though.

all kind of rancors till guardian 4444,
then geonosian up to acklay (for the fun of travelling the bunker and for the drops of acklay)
nightsisters (for the drops),
krayts (for the fun of it, drops and to kill a few imperials that think they can kill me while i hit on krayts)
Giant Dune Kimogila on Lok (for the drop... i wish)
 
thats about it, rest doesnt pop enough.

I hunt, Krayts(Pearls), and Night sisters(Something to do, its always interesting to see what type of loot drops) mostly. Sometimes do a run through the Corvette. But other than that Im pretty much more into PVP.

rancors rancors and more rancors.
there the only creature with mass numbers in the same area and only thing giving good xp that can be killed with little risk

i hate dathomir, i get like 5 fps there (have no idea why) plus rancors is all you can hunt at guardian there. they are too big, and when you have a pile of 30 built up it's kind've hard to tell what's going on. the terrain is horrible unless you waste force power on FR. and you're always interupted by some would be ganker.
 
On that note i didn't train in the lightsaber line of guardian so i wouldn't have to hunt there. i'm 044 and am just shy of being able to train in 3 boxes in the last line. i hunt voritor hunters (they don't hit the xp cap for guardian (about 600xp a pop) but are much easier to kill. get in a big group and voritor hunter missions spawn a ton. i get about 4-600k a buff from these missions (depending on how burnt out i am) AND since i bought my last set of pearls for the saber i'm still using now, have made 12 million in credits from missions.
 
now i'm sure to level up the LS line i'll have to go to dath, but it will only be for one or 2 buff sessions.

Initiate---> Apprentice:  Crystal Snakes, Skreeg, Klikniks, Mammians, Gurreck Forest Stalkers, Hanaraks, Bolma's, Wild Boar, Anglers, znd the occasional Spiders on Endor.
 
Apprentice------>Knight:   Rancors, Bolma, Kamuriths, NS's
 
Guardian------>  ENRAGED RANCORS and NS's only.  And the occasional silly Imp or BH.
 
  That is all.

Quenker Ravagers are AP0, and they were great for the apprentice tree

Actually JustG, you SHOULD have this be related to the revamp! Here's why.
 
Right now, as you progress higher up the Jedi skill trees, you are severly limited in what (and where) you can hunt. Once you hit Apprentice and move towards Guardian, you are limited to dathomir (rancs and enraged rancs). This wouldn't be a huge problem, if the rancor spawns were more evenly spread out. As it stands now, if you want to find high level Jedi getting xp, you just have to go West of the northern outpost on dath. (can't remember the name).
 
Maybe having Rancors spawn only in these areas is 'by design', but it seems like there should be other spawns of them elsewhere on the planet.

I'm only an initiate, so I don't qualify for the question.  But since my answer appears a little different from everyone else's, here goes:
 
Either.... anything on Endor that doesn't poison or disease.  Or, more likely:
 
Dathomar: for quickest XP: brackasets, giant / angry baz, kamuriths (I take my chances on the disease), rancor youths, rancors, rho guardians
 
Dathomar: for fun: Small to medium packs of NS, protectors on down.  If I spend a spot with, say, 5 rangers on one end, 5 outcasts on another and a weaver/protector/2 sentinal team as the thrid point of the triangle, then I'm having a lot of fun.
 
I find I tend to shoot for tougher mobs than I should for optimal XP gain.  The reason is its more fun.  Slower, riskier, but not as deadly dull.

4444guardian , I hunt Ackleys , Bountyhunters, any rebel, Krayts, Gorax , Lord Nyax , kimogilas, Light jedi (including initaites if they don't go dark ) Nightsisters (any except elders) etc..

High Level.
 
Rancors for grinding to be the only non npc thing that can max your personal Jedi diff. Gorax, nah to time consuming.
 Npc's seem to up visability.
 Large stuff like Krayts and Kimos in a group for fun.
 
Geo Cave when I am looking for a fight, darn near instant visability with all the people there.

I'm just an initiate so I guess my hunting habits aren't of my interest (there's plenty to choose from at this level).
 
You should *really* add more hunting content for high level jedi. All I hear higher level jedi talk about is rancors, rancors, rancors...

Interesting that you post this, not to slam or demean your team's work on the space expansion but this is one of the disappointments i had after reading about the expansion. Lack of new planets. I was really hoping for 1 or 2 more planets with higher level content because:
 
1.) I'd love to have some more variety in spawns to kill
2.) Would spread the player base out more.
 
Some future suggestions (im sure you probably already have it on the table but still) for planets would be :
 
1.)Hoth- of course an ice planet would be a logical step. Some wampa hunting would be interesting.
2.)Kashyyyk - what wookie wouldnt want to go to their homeland, also the underforrest content would be viscious and enjoyable. Of course, i'd imagine the Z-Axis coding might be a bear to create the Wookie tree top villages.
 
I can think of many others that im sure have been thrown out there before. Would be interesting to see Dagobah as a Jedi only planet for quest initiation or conclave movement but there would probably be some issues with that idea.
 
As far as the question itself, the other post have pretty much summed it up already. i can only think of a few other minor mobs that i dont really spend a whole lot of time hunting.
