Incap Food has a 45 min or so timer. So you can take it and feel relatively secure knowing you have a safeguard. Mine has a -226 reduction time on incap. As no incap goes over 99 or so seconds, I never hit the ground. It gives you an advantage when you're expected to go down, your actually up and healing, with your opponents guard dropped.
You get one incap save per dose. It's also a food.
They're called Cavellian Creams and are still available.

I have found most this information useful but find that even with macros setup to unequip sabres I just can't pay enough attention to keep people from seeing me. I have no idea if I'm on the terms yet(completely possible) but with all the delays to swap out gear I simply find it difficult at best to prevent people from seeing me in my saber/robe. Not to mention I'm usually in the middle of combat at the time.
I have also found even at just novice sabers I can take on Grassland Voritor Trackers at about 680xp per, I was a def stacker before jedi and maintain most of my defenses still. I was also considering picking up Nov Defender as that gives you a nice little bump of +20 Melee def not to mention other jedi defenses at a cost of only 8 skill points.
