I guess it is because every race has their own special unique abilities and bonuses. It's what makes certain species better for certain professions. Zabracks only get as much special treatment as every other species.
Every species gets more bonuses and has more differences than most people realize. (Props to www.swgcenter.com for the info)
The experience bonuses mean that species gains that much more xp than others. The Imperial Prejudice is the amount you multiply any faction costs if you play as an imperial with that species. The Empire doesn't like aliens much - The closer to human you look as an Imperial, the better. The rest is pretty self explanatory.
